Özet
Beslenme, canlıların büyüme gelişmesinin sağlanması ve yaşamsal fonksiyonların sürdürülmesi için dışardan besin maddelerinin alınması ve etkin olarak kullanılmasıdır. Beslenme biliminin ilgi alanı aşağıdaki konulardan oluşur: a. Yaşamsal fonksiyonların ve sağlıklı olma halinin devamı için hangi besinler alınmalıdır? b. Bu besinler hangi miktarlarda alınmalıdır? c. Her bir besin öğesinin biyolojik görevi nedir? d. Besin öğesinin eksik olması ve fazla olması durumunda organizma nasıl etkilenir?
İnsanların beslenmesi için gerekli besin grupları karbonhidratlar, proteinler, lipitler, mineraller, vitaminler, su olmak üzere altı grupta toplanmaktadır. Bu gruplarda yer alan bazı maddeler hem vücutta sentezlenir hem dışardan gıdalarla temin edilir. Vücutta sentezi yapılamayan C vitamini, fenil alanin, demir gibi esansiyel maddeler mutlaka dışardan beslenme ile temin edilmelidir. Besinlerde yağın bulunması, yağda eriyen vitaminlerin sağlanması için gereklidir. Besinler hangi miktarlarda alınmalıdır sorusunun cevabı için önerilen günlük gereksinim (recommended dietary allowance, RDA) miktarına bakılmalıdır . Besin alımı, yaşa, cinsiyete, beslenme şekline hamilelik durumuna gibi faktörlere bağlı olarak değişebilir. Besinler, enerji ihtiyacının sağlanması için önemlidir. Vucütta sentezlenen biyolojik maddelerin sentezi, kas kasılması, sinir iletisi gibi bir çok olay için enerjiye ihtiyacımız var. Bu enerjinin besinlerin oksidasyonu ile elde edildiği ilk kez 1794 yılında Lavoisier tarafından ortaya konmuştur. Enerji veren besinler öncelikle yağlar olmak üzere, karbonhidratlar ve daha az proteinlerdir. Bir gr yağın oksidasyonu ile 9 kcal enerji sağlanırken, 1 gr karbonhidratlar ve proteinin oksidasyonu 4 kcal enerji sağlar.
Nutrition is the process by which organisms obtain and efficiently utilize nutrients from external sources to support growth, development, and the maintenance of vital functions. The field of nutritional science focuses on the following questions:
a. Which nutrients are necessary to sustain vital functions and maintain health?
b. In what quantities should these nutrients be consumed?
c. What are the biological functions of each nutrient?
d. How is the organism affected by a deficiency or excess of a given nutrient?
The essential nutrient groups required for human nutrition are classified into six categories: carbohydrates, proteins, lipids, minerals, vitamins, and water. Some substances within these groups can be synthesized by the body, while others must be obtained through diet. Essential nutrients such as vitamin C, phenylalanine, and iron cannot be synthesized by the body and must be supplied through nutrition. The presence of fat in food is necessary for the absorption of fat-soluble vitamins.
To answer the question of how much of each nutrient should be consumed, one should refer to the Recommended Dietary Allowance (RDA). Nutrient requirements can vary depending on factors such as age, sex, dietary habits, and pregnancy status.
Nutrients are crucial for meeting the body’s energy needs. Energy is required for the synthesis of biological molecules, muscle contraction, nerve transmission, and many other physiological processes. The fact that this energy is derived from the oxidation of nutrients was first demonstrated by Lavoisier in 1794. Among energy-yielding nutrients, fats are the primary source, followed by carbohydrates and, to a lesser extent, proteins. The oxidation of 1 gram of fat provides approximately 9 kcal of energy, while the oxidation of 1 gram of carbohydrate or protein provides about 4 kcal.
